Stuffed Chicken Saltimbocca

I love waking up on the weekends and turning on the Food Network Channel or The Cooking Channel. Its actually pretty convenient on Sundays because that is typically when we decide our weekly dinner menu and we can get many ideas.

The Rachael Ray show A Week in a Day was on. Her meals are always interesting to watch, even though most of her foods my other half would not eat (Boo!) . She started making a chicken dish called, Stuffed Chicken Saltimbocca. Half way through her meal prep I turned to Don and asked if he would eat that dish! I was surprised to see his head nod up and down to signal a YES!!! I was so happy.

Recipe for STUFFED CHICKEN SALTIMBOCCA ( courtesy of Rachael Ray )

  • 1 cup fresh ricotta
  • 1/2 cup grated Parmigiano-Reggiano
  • 8 to 10 fresh sage leaves, very thinly sliced I acutally used BASIL instead of sage.
  • Splash of milk or half-and-half
  • Kosher salt
  • 4 boneless, skinless chicken breast halves
  • Freshly ground pepper
  • 8 slices prosciutto di Parma
  • EVOO, for drizzling

Combine the ricotta, 1/4 cup Parmigiano-Reggiano, sage and milk and season with salt.

Butterfly each chicken breast, cutting horizontally into the thickest part of the breast almost all the way through to the other side (keeping the breast attached on one side). Open each breast like a book and pound to 1/8 to 1/4-inch thick using the flat side of a meat mallet. Sprinkle the chicken with salt and pepper. Place a spoonful of the ricotta mixture in the center of each chicken breasts, then fold the chicken over to enclose the filling. Wrap each chicken breast with 2 slices prosciutto, overlapping them slightly. If you are pre-prepping your meal, wrap each chicken breast in clear wrap then refrigerate.

Preheat the oven to 400 degrees F.

Unwrap the chicken breasts ( if they are pre-prepped) and place on a rimmed baking sheet or shallow baking dish. Drizzle with EVOO, then bake until the chicken is cooked through and the prosciutto is crisp, 20 to 25 minutes.

The stuffed chicken turned out great and we will be making this dish again :) As you can seel I served mine with a side of corn. The suggest side dish was a tomato and arugla salad. Neither don or myself like tomato.

Household Debate

After you read this you might think I am slightly crazy … But hold your opinions till the end .. Please and Thank You ;)

We bought our home last August with the intentions of settling in, getting married and starting a family. Of course along with becoming homeowners, we became painters, interior designers, pool cleaners, landscapers… Ya know .. All that comes with owning a home ;)

As we started decorating, the first thing to be finished was the master bedroom then the guest bedroom to follow. For some reason the third bedroom aka ‘ the baby room’ or ‘ the office’ ( depending on who you ask ) was skipped over and we began decorating down stairs!

Let me clarify to those we read this ( mostly family ) we are NOT trying to have a baby !!!!

My reasoning for calling this room the baby room is due to the fact it is a perfect size for a baby ( ok. ok..and an office) and I don’t find it necessary to spend the money on making this a full blown out office then turn around to spend more money on baby furniture! The guest room is plenty big to add a desk and a chair , so why not ?

Till then, the third bed room sits freshly painted full of moving boxes and winter jackets. ( and probably will for quiet some time )

Weekend Randoms

Man, Oh, Man where did this weekend go.

Florida was expecting to have rain all weekend. We did get alot of rain, however it was not enough! While on most Saturdays we have people over and lay by the pool, this Saturday because of the weather we had friends over and played board games instead! We had a great time. I honestly have not laughed so hard in a very long time! I hopefully will be filling our closets with board games ! That’s for sure !

My friend crystal came down to Orlando for a family birthday party that was today ! I offered her and her fiancĂ©e to stay at our place so we could have a quick visit ! I quickly found out that she wanted to me to be her MOH ;) I love weddings ;) and can’t wait to have one of my own ( hopefully soon )

I love salt. My family even makes fun of me by saying I need to purchase a salt lick! Anything flavored salt and vinegar is my kind of snack . The other day during lunch I ran into CVS to pass time and while wandering through the store I found some salt and vinegar almonds. I was so excited and my mouth started to water immediately! They were different but yumm-oh

Last, but not least of my weekend we had a new addition to our family. We have been searching for the perfect one for quiet some time , and this one just fell into our laps. Friday afternoon we spent some time purchasing my new car ;) we actually had this car shipped from Tampa hoping it would be the perfect fit for our family ! It’s equipped with all the bells and whistles any one could ask for . I was sad to let my little coupe go , but definitely needed a larger vehicle . Asking our neighbors numerous times to borrow their SUV can become embarrassing!

Garlicky Breadcrumb Pasta

Happy Tuesday Folks. I am already looking forward to the weekend. Here in Central Florida it is supposed rain for 4 days. Yipee… WE NEED IT SO BADLY… Especially when you have a newly sodded back yard :)

I finally started making some new recipes again. Tonight we had Garlicky Breadcrumb Pasta. You must be a GARLIC lover to enjoy this recipe. Its a simple, low ingredient recipe.

Garlicky Breadcrumb Pasta

  • 2/3 cup of breadcrumbs. I used Italian Breadcrumbs that I had in the cupboard already.
  • 2 tablespoons olive oil, divided.
  • 6 garlic cloves, minced. I have the pre-minced garlic. About 1/2 tsp = 1 clove
  • 8 ounces uncooked linguine
  • 1/4 cup chopped fresh parsley This is the only ingredient I did not use
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt. I only used 1/4 because I was using the seasoned breadcrumbs
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon of onion powder - this was my addition to the recipe.

Directions:

  1. Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium heat. Add garlic; cook 30 seconds, stirring constantly. Remove from heat, and let stand 5 minutes. Return pan to heat. Stir in breadcrumbs, and cook 6 minutes or until lightly browned, stirring frequently.
  2. Cook pasta according to package directions, omitting salt and oil; drain. Place pasta in a large bowl. Add 1 1/2 teaspoons oil, breadcrumbs, parsley, lemon juice, salt, and black pepper; toss gently to combine. Serve immediately.

As I was eating, I was thinking of a way to add UMPH to the dish. . . If this is to plain for you and your family, try adding grilled chicken or fresh sauteed veggies ( squash, zucchini, etc). Otherwise, it is perfect for picky eaters and vegetarians.

Happy Happy Pupday !!!!

Today is our four legged friends FOURTH birthday. I can hardly believe this! I always can count on Lola to get me up right on time for work. She never lets me sleep past two snoozes. She must have known today was her birthday because she did not bother giving me morning kisses or pawing at my shoulder to get up . She must have though she deserved to sleep in on such a special day just as us humans do.

Lolas bio parents and our breeder sent birthday wishes and pictures this morning. They are really good at keeping in touch!!!

Wait wait wait … What about life time good luck ?

Today a co-worker and I went downtown for some pizza for lunch. While we were feeding our starving tummies we were staring out the window at two city workers as they were cementing a sign into the ground.

As we were leaving , my co-worker jokingly acted as if she kicked the perfectly cemented sign in the ground and laughed . The workers rolled down their windows, laughed and asked if we wanted to put our initials in the cement before it set .

Just like a little kid, i immediately said ‘I do, I do.’ I have never done that before. Amy looked at me like I was her 5 year old son ! The very kind gentleman said what about a coin … I guess its better than my initials .

We looked around and found a penny heads up !!!! Instead of my initials, I pressed the penny in the cement until the edges were slightly covered!

Weekday Random

… I know … I know… I am a big time slacker with cooking my new recipes . I will make you look forward to future post by saying I do have a MUST TRY cook/ bake list going and I will be cooking ALoT once I get to the grocery store !

Until then, I am going to bring up the most talked about subject in Florida,
but briefly . Something that is in my home town . George Zimmerman was charged with 2nd degree murder of Treyvon Martin !

At first , I was very opinionated just as everyone else and their mom has been. Do we really know what the TRUE and HONEST story is ?

NO.

This story has gotten so out
of hand . IN MY OPINION, this case has been taken to the deep end when it comes to racial discrimination .

As we pulled into some of our friends neighborhood ( which is the community this incident happened in ) we came across the memorial ! It was sad !

Get to know….

The Sarah Mac Band !

We spent the Easter weekend with my parents. We left Orlando Thursday night so we could enjoy the few days we were going to be in town instead of feeling like we just pulled in to just pull out and head home.

I have heard my parents talk about going to see this band several times in Tallahassee. It so happens that they were playing Friday night at a venue close to where we were. We were joined with my Aunt Debbie, Uncle Rick and handful of some of my parents friends. To be honest, Don and I were a little skeptical about going but The Sarah Mac Band was great. They did play at least one cover that I noticed and several of their songs off their albums. In my opinion, it was a mixture of Adele and Sugarland; the great voice, the dancing, the comedy between each song.

Only in Tallahasee….

We decided to wake up and run some errands first thing this morning. I needed to go to my old allergy and asthma doctor to get an inhaler. The pollen is blooming like crazy here .

Anyway, while we were out we decided to meet a good friend for lunch. While we waited for lunch time , we decided to waste time at some of the local nurseries. It’s been a gorgeous ‘cool’ morning and we wanted to take advantage of it !

While we were browsing we came across a section for home grown plants! I am not talking about home grown pretty flowered plants… I’m talking about the green illegal plants. Take a look …

I love my home town ! It’s much different then when I grew up though. The over growing colleges bringing in flocks of different varieties of people has changed this city … In my opinion!!

A little of EVERYTHING

I have totally been slacking on cooking new recipes lately, I do have a recipe
I will be doing tomorrow … Only if my mom purchased the ingredients I requested ;) thanks mom ! Hopefully I will have something to post about this soon !

As I blog, I am on the way to visit my fam(ily) in good ole’ Tallahassee…I am hoping to catch a few friends while we are there also ! And snag a boat trip from my parents ;) Lola is such a pleasant travel buddy !!

I swear this week seemed like the longest week everrrrr ! So thankful it is over … We had a 95degree day today . Blehhhh!!! hopefully Tallahassee won’t be as hot ( wishful thinking )

In the midst of cleaning a patients teeth today , I was thinking of how similar keeping up with your body was very similar to car maintenance.. SO RANDOM .. I know I know .. If you don’t clean your teeth , it effects your heart.. Blah blah blah… If you don’t get oil changes it effects the motor .. Blah blah blah …I even said I wouldn’t post this on my blog due to how random my thought was … Oh well..

I totally forgot… I am back in school to get my BS and hopefully heading to grad school !!! ( who would have thunk it ;D ) I am running full force and very excited actually !

Don and I are getting excited for the month of may ! We are taking our first vacation in the longest time ! Totally needed ;)

Enough of the random ‘everything’ post for the week ! I ll get back on my blogging game shortly !
