Salted Caramel Cupcakes

Sweet. Salty. Delicious.

Birthdays are a great reason to bake and I always use these times to try new things. The GREAT thing about this is, my neighbors know that I love to bake so I use them as my ‘guinea pigs’ so instead of buying gifts for birthdays, I send a sweet treat their way. . . BUT I want the criticism in return.

This birthday I made Salted Caramel Cupcakes.  YUMMY ! The best thing about these cupcakes is that they are semi-home made :)

Cupcake Ingredients

1 box of yellow golden butter cake mix

3 eggs

1/2 cup of butter – melted

1 cup of caramel machiatto creamer

Icing Ingredients

1 8oz box of cream cheese – softened

1/2 cup of butter – softened

1 cup of caramel

7-8 cups of sifted powdered sugar

Additions:

Caramel

Sea Salt – course

Chopped Walnuts

Directions for cupcakes:

–Preheat oven to 350 degrees. Line muffin tin with cupcake liners.

–In a large bowl, using a mixer, combine cake mix, eggs, butter and creamer for 1 minute. Scrap the side of bowls and continue to mix on medium for 1 minute.

– Scoop even amounts of batter into lined muffin tin and bake 18-20 minutes.

–Let cupcakes cool on baking rack.

Directions for Icing:

–Place the softened butter in bowl and blend softly. Add cream cheese and mix until smooth.

–Add caramel until fully incorporated.

–Slowly add in the powdered sugar until thickened. Turn mixer on medium and beat for 1-2 minutes until icing becomes fluffy.

–Pipe icing onto cooled cupcakes, drizzle caramel, sprinkle a little salt and add chopped walnuts.

My Thoughts

I used homemade caramel ( Will post recipe another time), but store bought will be just as delicious !

My cupcakes baked for 19 minutes exact and were perfect.

I didn’t have the patience to sift all 7 cups of sugar.

I added the chopped walnuts. They work !

Definitely on the ‘make again’  list !

All In One

Can we say SLACKER ? Sorry about that….I have been on a short hiatus due to having company and just being plain ole busy ! I am going to try an all in one post with a few things that I have been holding on to. I will start with a NEW recipe that we tried. Its by far one of the easiest recipes I have made. It also can be money friendly assuming you have ALL THREE  ingredients already in your home like we did. Of course, I found the recipe on pinterest !

 

Glazed Brown Sugar Chicken

Ingredients

3 1/2 Lbs. of chicken ( we used breast .. I am sure your favorite cut of chicken is A-ok )

1 packet of dry italian season ( found on salad dressing aisle )

1/2 cup of brown sugar,  packed. ( I am certain light or dark will be fine, use what you have in the cupboard)

 

Directions

Preheat your oven to 350 degrees Fahrenheit. Grease a 12 inch x 9 inch pan and set aside. *** I used foin in the bottom of my dish in tin foil to make it easier to clean *** .. I will also tell you to double your tin foil or place wax paper under the tin foil! My foil ripped during the cooking making the foil pointless and an absolute pain to clean !

Rinse chicken, pat dry with paper towels.

Combine the dried Italian seasoning mix and the brown sugar, making sure its mixed well !

Dip and press the chicken into the mixture, coating front and back and place into your prepared pan, topside of the chicken facing up. Any extra coating that remains can just be sprinkled over the chicken.

Depending on the cut of chicken, bake for about 45-60 min ( until chicken is fully cooked ). Mine took 45min, however reading other blogs they cooked from 50-60 minutes. I also flipped my chicken every 15 minutes using a spoon to drizzle the melted sauce over the chicken. Beware the melted sugar is absolutely HOT! The chicken was moist and flavorful !

 

 

That is my only food related ‘stuff’ today. We had some company come and visit this weekend.  We had a blast with them. I am not sure how this came about, but Don has really foggy head lights. It just so happens, that Kendra ( one of our guest / good friends / bridesmaids ) also had foggy headlights but found a quick, inexpensive way to get rid of those unwanted foggy headlights. You would never guess… but it was toothpaste. All she did was take a basic toothpaste( no whitening ingredient AT ALL , we used the basic cavity protective tp. ), put a large dollop on a paper towl and rub in  circles on the outside of the headlight. Listen up … She did one headlight using circles and I did one headlight just rubbing back in forth… The circles definitely work the best ! You have to use the muscles to .  Before spending your money on the more expensive fix… Try toothpaste.

 

 

 

As most of us know, this past weekend was the first weekend of College Football, Yipee! I was born and raised a Florida State University Seminole fan and a proud one at that. Now I know that our team hasn’t been at there prime in quiet sometime, but I will still cheer them on! My fiance’ , my neighbors, and my bosses are ALL Florida Gator fans. I really wanted to play some kind of joke on someone this year, and I chose my bosses because I always get an ear full about being a seminole fan ! I needed to think of a quick friendly fire because after all I did want to keep my job. This is what I came up with . . .

They almost needed to use them , maybe next week !

Chicken & Biscuit Casserole Style !

I am always searching for new and easy recipes especially with Don being a picky eater. Even though this recipe is not the healthiest, It still was really good. Hope you go and Pin this recipe and try it yourself.

RECIPE

1 roll of Pillsbury biscuits
1 can condensed cream of chicken soup (regular sized)
1/2 cup of Sour Cream
1/2 stick of butter, melted
1 can of peas – I did not use because Don would not eat them
2 cups cooked chicken, (I boiled mine shredded it)
1 cup mild cheddar cheese
3 TBS milk – I actually forgot to use the Milk.. It was a good thing because they mixture was a little runny

Directions:
Heat oven to 375 degrees F.
Mix soup and 1/2 cup sour cream in 8-inch square baking dish. Stir in chicken, and peas, milk, and melted butter: flatten out, and put the cheese sprinkled evenly on top. I added some pepper into the mixture.

Add the biscuits on top of the cheese. Just layer them in a single layer. If you did buy the thicker biscuits I would probably flatten them out a little, or cut them in half so they are not as thick, they will cook better.

Her recipe called to bake it for 35 minutes. However mine, only took 22 minutes. Just keep an eye out ! ENJOY !

Such a sweet FAILURE

What would a blog be without the good, the BAD and the UGLY… So for the past couple post I have been giving you  these new recipes that we have tried in our house. Tonight we decided to grab a quick and very early dinner since I get off work earlier on Tuesdays. Eating dinner to early can result in a little hunger before bed time. I knew it was going to happen. We both were craving something sweet and we did not have much around the house to snack healthy. Of course, Pinterest to the rescue (maybe) again ! I remembered awhile back that I pinned a recipe for only TWO cupcakes instead of 2 dozen :) I figured I would have all the ingredients, especially for only two cupcakes.

The cupcakes came out looking really good. They were peaked and felt good to the touch. As far as the icing goes, I didn’t really have all the stuff to make it. I just through some cream cheese, peanut butter, confectioners sugar and some milk together until I got the right consistency. I love cream cheese and peanut butter so I was satisfied.

I was really excited that we were going to be able to satisfy our sweet tooth with out having to bake a bajillion cupcakes or having to leave the house. The look of the cupcakes were VERY deceiving. They were H-O-R-R-I-B-L-E. The look and sound that came from Don I knew they were not edible. I tore the bottom off of my cupcake to taste it without icing and I could not even chew it before it came out of my mouth. Something was wrong. Don said it was very eggy. It even smelled eggy. I followed the recipe exactly . Oh well, calories well saved here. Atleast the icing tasted good :0)

 

CUPCAKE FAILURE! I will stick to baking 2 dozen instead of 2 !

Cheddar Cracker Chicken

I can’t even think of how to start this post. Maybe its because I am still thinking of how yummy our dinner was. I was supposed to make this recipe last week,  but I actually pushed it the side because it sounded really bland. Was I wrong! It was cooked perfectly ( which I was thrilled with, because I am still figuring out this oven after using it for a year…) and Don ( the picky eater ) LOVED IT! I hope you find this recipe as easy and delicious as we did. Its definitely a keeper! Check it out :)

 

Cheddar Cracker Chicken

Ingredients:

16 Ritz Crackers crushed ( about 3/4 cup )

6oz of sharp cheddar cheese

1 clove of garlic – finely chopped

1-2 stalks of scallions – thinly sliced

1/4 tsp of black pepper

1/4 tsp of salt

4 tbsp of of unsalted butter melted ( WE DID NOT USE BUTTER, INSTEAD I USED ONE EGG )

Directions:

Heat oven to 350° F.

In a bowl, combine the crackers, cheese, garlic, scallions and ¼ teaspoon each salt and pepper. ( I omitted the scallions simply because I did not have them on hand )

Pound the chicken to about 1/4 – 1/2 inch thickness with a meat mallet. Dip the pounded chicken in the butter ( I used a whisked egg instead) , then in the cracker mixture, pressing gently to help it adhere, and place on a foil-lined baking sheet.

Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown and cooked through, 20-25 minutes.

ENJOY !!!

The cheese melted in a way where it was not runny, nor burnt. It almost formed a thick, firm crust. I also seasoned my chicken before dipping it in the egg with Morton nature seasoning. Don typically always has an opinion about my food and tonight his comment was, ” I am trying to think how you can make this chicken better, but its already so good.” Yipee for me ( well actually for who ever came up with this recipe )

Baked Penne

Well HEY there! Didn’t think I would be posting again so quick eh? Tonight’s dinner was another new dish. We don’t eat a lot of pasta however I was drooling when I saw this dish. By looking at the photo, It reminds me much of baked ziti except this dish has a few twist and turns. Plus, I have really been wanting to use the Philadelphia Cooking Creme.

Baked Penne

Ingredients:
1/2 lb of ground beef or ground sausage
1/2 cup chopped onions
1/2 cup chopped green peppers
24oz Spaghetti sauce
1 tub of Philadelphia cooking creme ( Italian Cheese and Herb )
1 cup of mozzerella cheese, divided
3 cups cooked penne pasta ( 1 1/2 cups of dry pasta )

Brown your choice of meat with the chopped vegetables. Stir in spaghetti sauce, 3/4 of cooking creme, and 1/2 cup mozzerella. Stir until mozzerella is melted ( 2-3 minutes ). Add your cooked pasta. Pour mixutre into a casserole dish. Top with remaining creme and mozzerella.Cover and bake for about 20 minutes ( uncover after 15 minutes ).

Voila..You have baked penne.

okay okay . . . so this dish is not my favorite, didnt really tickle my fancy. Its another EASY recipe. Great for on the go moms when they need to prep dinner prior to cooking them. Its also good for picky eaters, just remove everything they wont eat. Anyone can become very creative with this dish ( use meatballs, chicken, all veggies ). Try it! I hope you enjoy it more than I did.

Baked Italian Chicken

I told you I had a few new recipes to try this week…Here is my first one! Several people pinned this recipe on pinterest however the recipe is not linked to a website to give any one person the credit ;0)

Recipe as follows:

PREHEAT OVEN TO 350 degrees

4-6 chicken breast ( I am only cooking for 2, so I did 2breast )

Red potatoes

Green Veggie ( the recipe actually states green beans or broccoli, canned or fresh; I used canned green beans drained)

1 packet of dry Italian seasoning

Melted stick of butter ( I used 1/2 stick, olive oil is probably healthier )

Salt and Pepper as needed

Bake for 1 hour ( I did 45 minutes since I only had 2 breast )

Its definitely something to try. We both thought it was pretty bland, nothing special. If your looking for something easy to throw together and go, this is it! I am sure you could even make ahead minus the butter…maybe use chicken stock instead ( also healthier alternative ) . Check back this week for more first time recipes !

Choc-Oreo-Nies

I am sure you are wondering what in the world are chocoreonies ? Okay okay so I sort of made that name up however I can not claim I came up with this super sweet dessert !

Chocoreonies : (n) a combination of CHOCOlate chip cookie dough, oREOs, and browNIES!

INGREDIENTS:

I used the pre-made cookie dough, but if you would like to make your own go right ahead.

1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips
1 pkg Double Stuffed Oreos
1 Family Size (9×13) Brownie mix
1/4 cup hot fudge topping

Preheat oven to 350 degrees F.

For homemade cookie dough:

Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips. Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with wax paper and sprayed with cooking spray.

Top with a layer of Oreos.

Mix together brownie mix, adding an optional 1/4 cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos.

Cover with foil and bake at 350 degrees F for 30 minutes. Remove foil and continue baking for an additional 15-25 minutes. Let cool completely before cutting — brownies may still be gooey in the middle when still warm, but will set up perfectly once cooled.

Cinnamon Toast Crunch CUPCAKES…

Oh yes I did…. I pulled out the inner fat kid and made some delicious cupcakes. Of course this recipe was hidden among my other 174 pinterest food pins. What can I say, I truly love to cook and bake anything. It was my neighbors birthday this week, since she has been on vacation we have not been able to celebrate. When she gets home she will have some fun, crunchy, sweet cupcakes waiting on her !

I really did not stick with the recipe connected to the pinned photo above. Here is the {Semi-Homemade} recipe I used. They cupcakes came out so moist and PERFECT

Cinnamon Toast Crunch Cupcakes. . .

Cinnamon Cupcake :

3 Eggs
1/3 Cup oil ( I used canola oil )
3/4 Cup Buttermilk
1Teasoon Vanilla Extract
3/4 Cup Sour Cream
Vanilla Cake Mix
1 1/2 teaspoon of cinnamon
 

Cinnamon Toast Crunch Buttercream Icing:

8 oz cream cheese, Softened
1/2 Cup butter, Softened ( I used salted )
1 Teaspoon vanilla
3 Cups powdered sugar
2/3 Cup Cinnamon Toast Crunch Powder
    - crush cinnamon toast crunch cereal in a bag or food processor. Sift out 2/3 cup )
 

Directions:

Preheat oven to 350 degrees, line muffin pans with cupcake liners.

In a large bowl, combine eggs, oil, buttermilk, and vanilla. Mix in sour cream.

Add cake mix and cinnamon into the wet ingredients, mix until smooth.

Fill cupcake liners 3/4 full and bake for 15-18 minutes. I baked at 17 minutes and they came out perfect after they cooled.

For the icing: beat cream cheese and butter until fluffy. Adding powdered cereal. Add vanilla and powederd sugar. If your consistency becomes to thick, use milk to thin out to your liking.

Pipe onto cupcakes as desired. Top with cereal square.

A little home project for organization !

I have been wanting to do some organizing with my jewelry since we moved into our home. I have been on pinterest and found SEVERAL different and nifty ideas I could use. I wish I had enough jewelry to use all of the ideas. . . maybe one day! I had necklaces and bracelets laying , in, on, next to my big jewelry box, both night stands, my dresser and even hanging from my closet and bathroom doors. I was getting sick of it, and I surely know Don was!

This morning I was gathering somethings together and needed to close the bathroom door to get behind it. I noticed there was a nice, blank, hidden space where I could use one of the pinterest ideas. I pulled up the pin and discussed with Don to get his approval. We try and agree on everything that we do in the house.

I thought it was a great way to hang the jewelry especially necklaces and bracelets do not get crimped and ruined. We purchased 2 cafe rods to match the bed room ( brushed nickel ). I was extremely eager to put them up. I usually let Don do all the leveling and hanging because I typically think everything is crooked and it always gives me a headache. As soon as we pulled in the garage, I grabbed the tools I needed and ran up stairs. I managed to get one side in perfectly however the second side did not go as planned. The angle I was coming from I kept slipping with the drill and hitting the freshly painted wall… Uh-oh!
I called for Don to come and help. He was able to get both rods in and secure as long as it took me to get one bracket up. I am so thankful for a handy man ! Although he did say I am not aloud to touch the drill any more. I am okay with that :) It turned out great.

Its easily hidden by the bathroom door which is open a majority of the time. It was a piece of cake  and not time consuming one bit. I am happy !
